Carrot and Celeriac Soup
Great for your skin and eyesight
Serves: 6
Preparation time: 15 minutes
Cooking time: 1 hour
Ingredients
6 carrots
4 small parsley roots
1 celeriac
2 leeks
1 small onion
12 cups of water
3 cloves garlic
2 celery sticks
2 tbsp coconut oil
a dash of pepper
1 tsp Himalayan salt
1 tbsp black sesame seeds
1/4 broccoli sprouts
Instructions:
- Wash carrots, parsley root, and celeriac and cut into cubes.
- Cut leeks and onions into circles and fry in coconut oil.
- Add carrots, parsley root, and celeriac. Add spices.
- Place in a pot with water. Bring to boil. Cover and gently simmer for about 1 hour.
- If you wish: transfer soup to a food processor or blender while adding 1 cup of water. Blend well.
- Serve soup into individual dishes and sprinkle with black sesame seeds on top.
- Serve soup with whole grain brown rice with lentils.
