Recipe – Healthy, Vegan, Brown Rice and Lentil Stuffed Tomato Cups

Healthy, Vegan, Brown Rice and Lentil Stuffed Tomato Cups

An elegant, healthy, satisfying meal – great for special occasions!

Serves: 4

Preparation time: 30 minutes

Cooking time: 1 hour 30 minutes


9 ripe tomatoes

3 tbs coconut oil

13 large onions

1 cup round whole grain (brown) rice

1/4 cup tomato paste

1 cup parsley

1 cup red lentils

1/2 tsp black pepper

1/2  tsp himalayan salt

3.5-4 cups of water


  1. Arrange tomatoes on chopping board. Cut bases off from tomatoes. Scoop out the seeds and flesh from inside the tomatoes so as to form tomato cups.
  2. Chop the flesh from the tomatoes. Chop onions.
  3. Heat coconut oil and fry onions over low heat. Add rice and lentils. Stir for 3 minutes. Add chopped tomato flesh and tomato paste. Bring to boil. Reduce heat, cover and allow to simmer for 7 minutes. Remove from heat. Stir in the salt, pepper, and parsley.
  4. Preheat oven to 180 ºC (360 ºF)
  5. Spoon mixture into tomato cups. Arrange filled tomatoes in a deep tempered glass baking dish with cover. Pour water into dish. Cover with the top.
  6. Bake for 60 minutes
  7. Remove top and bake for another 30 minutes
  8. Baste with pan juice just before serving
  9. Serve dish with leafy green salad.
  10. Enjoy!

You may exchange the tomatoes for bell peppers, onions or even potatoes!
