Tasty Vegan Lentil Soup
Great as a winter appetizer that will keep you feeling full and satisfied for hours
Serves: 4
Preparation time: 20 minutes
Cooking time: 1 hour 40 minutes
Ingredients
2 cups brown lentils
1 cup cut carrots
1/2 cup cut potatoes
12 cups water
1/2 tsp Himalayan salt
1/2 tsp ground cumin
1/4 tsp allspice
1 medium onion, finely chopped
1 tsp coconut oil
1/4 cup finely chopped fresh parsley
Instructions:
- Wash lentils, peel and cut potatoes and carrots.
- Place in a pot with water. Bring to boil. Cover and gently simmer for about 1.5 hours
- If you wish: transfer soup to a food processor or blender while adding 1 cup of water. Blend well. Put mixture back in pot
- Simmer over a low heat while adding allspice, cumin, and salt.
- Fry chopped onion till soft or use raw onion.
- Add onion to lentil mixture. Bring to boil for 10 minutes. Add chopped parsley
- Serve soup with a lemon wedge and fresh whole wheat bread or whole grain brown Basmati rice.
- Enjoy!
